Makes 6 Fishcakes
Ingredients:
200g Cooked Plain Mashed Potato
150g Fresh Salmon
150g Fresh Cod
150g Smoked Haddock
1 Bunch Spring Onions
100ml White Wine
Salt & Pepper
200g Flour
6 Eggs
500g Bread Crumbs
Method:
Place all fish onto a deep baking tray and splash the white wine over the top, season with salt
& pepper and cover with foil, bake @ 180˚c for 12-15mins.
Let the fish cool down. Finely chop the green of the spring onion and fry in a hot pan for
approximately 30 seconds.
Flake the fish into a mixing bowl and add the plain mashed potato & the cooked spring
onions, season with salt & pepper.
Mix all ingredients together and weigh into 90g portions.
Roll the portions into balls and panė them using the flour, egg & breadcrumbs.
When panėd press down to flatten the ball slightly.
In a hot pan, fry the fishcake until golden brown on both sides, then place onto a baking
tray and cook in an oven @ 180˚c for approximately 5-7mins.
Serve.
